MGR Rotisserie Chicken

MGR Rotisserie Chicken
Ingredients
  • 2whole chickens
  • 10 baby red potatoes
  • 1stick buttersoftened
  • 5cloves garlicfresh, minced
  • 2 lemonsjuiced
  • 1/4cup thymefresh, minced
  • 1/4cup oreganofresh, minced
  • 1tsp salt
  • 1tsp pepper
Instructions
  1. Mix butter, garlic, lemon juice, thyme, oregano, salt, and pepper.
  2. Rub this mixture all over the chicken and under the skin and inside, and on potatoes.
  3. Put a few holes in the potatoes.
  4. Cook in the Minnesota Mini™ until recommended temperature reached.
  5. Serve with salad.
Recipe Notes

Can use 1 cup olive oil in place of butter.

Leg of Lamb

Leg of Lamb
Ingredients
  • 1-2 boneless legs of lambtied with cotton twine
  • 1tablespoon salt
  • 1tablespoon pepper
  • 1stick butter
  • 1/2cup pureed garlic
  • 1cup lemon juice
  • 1cup chevre(creamy goat cheese)
  • 1teaspoon crushed red pepper flakes
  • 1tablespoon basil
  • 1tablespoon oregano
  • 1tablespoon thyme
Instructions
  1. Melt the butter and goat cheese and add all of the other ingredients in a mixing bowl and mix thoroughly.
  2. Place the legs of lamb in the Minnesota Mini Rotisserie and cook on low heat on your grill.
  3. Baste occasionally by drizzling the marinade on the lamb legs while they turn.
  4. Check temperature by stopping the rotisserie and placing meat thermometer between the bars, into the center of the leg. Cook to the recommended temperature and then remove cotton twine and serve.

Meat Lover's Feast

Meat Lover's Feast
Ingredients
  • 3-4 country style ribs
  • 1 pork tenderloin
  • 2 small chickens or Cornish hens
  • 1stick butter
  • 1tablespoon salt
  • 1tablespoon pepper
  • 1/4cup fresh rosemary
  • 1/4cup fresh thyme
Instructions
  1. Slightly melt the butter and add 1 tablespoon salt, 1 tablespoon pepper, rosemary and thyme.
  2. Rub all the meat with this and place meat in the Minnesota Mini Rotisserie.
  3. Place the rotisserie on your grill and cook on low heat.
  4. Cook meat to recommended temperature. Enjoy!
